Squashmania — What to eat now!

Since fall I have been singing the praises of root vegetables and winter squashes! 

They are magical, fortifying foods and our bodies LOVE them!  Eat them roasted in olive oil. You can cut up or even roast whole (like beets or carrots or sweet potatoes..even small pumpkins!)  Roast at 400 degrees, season with garlic and rosemary or your favorite herbs.
